Combine flax meal and water. Let stand 10 minutes.
Combine flour, sugar, and baking powder in a medium bowl. Stir in milk, flax mixture and I Can't Believe It's Not Butter! Vegan.
Spray nonstick skillet or griddle with nonstick cooking spray and preheat over medium heat . Pour about 1/4 cup batter into skillet for each pancake. Batter will be thin. Pancakes should spread to about 5-inch diameter.
Cook 2 to 3 minutes or until top forms bubbles and edges are set. Flip and cook 2 minutes or until golden. Repeat with remaining batter. You should have 8 pancakes.
Combine melted I Can't Believe It's Not Butter! Vegan, brown sugar and cinnamon.
Combine confectioners' sugar and maple syrup and stir until smooth. Thin, if desired, with a little plant based milk.
Brush one side of each pancake with cinnamon sugar mixture. Cut each pancake in half.
Use 4 pancake halves for each 'cinnamon roll'. Take one pancake half and roll tightly with cut side up. roll the second half around the roll, cut side up. Roll the next 2 halves around, cut sides down. Secure bottom with toothpick.
Arrange on plate and drizzle with maple glaze.
