Ingredients

Pancakes
  • 1 tablespoon flax meal *
  • 3 tablespoons water
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1 cup plant based milk
  • 2 tablespoons I Can’t Believe It’s Not Butter!® Vegan, melted
Cinnamon Sugar
  • 2 tablespoons I Can’t Believe It’s Not Butter!® Vegan, melted
  • 1 teaspoon brown sugar
  • 1/4 teaspoon cinnamon
Maple Glaze
  • 1/2 cup confectioners' sugar
  • 1 tablespoon maple syrup

Instructions

Pancakes
  1. Combine flax meal and water. Let stand 10 minutes.
  2. Combine flour, sugar, and baking powder in a medium bowl. Stir in milk, flax mixture and I Can't Believe It's Not Butter! Vegan.
  3. Spray nonstick skillet or griddle with nonstick cooking spray and preheat over medium heat . Pour about 1/4 cup batter into skillet for each pancake. Batter will be thin. Pancakes should spread to about 5-inch diameter.
  4. Cook 2 to 3 minutes or until top forms bubbles and edges are set. Flip and cook 2 minutes or until golden. Repeat with remaining batter. You should have 8 pancakes.
Cinnamon Sugar
  1. Combine melted I Can't Believe It's Not Butter! Vegan, brown sugar and cinnamon.
Maple Glaze
  1. Combine confectioners' sugar and maple syrup and stir until smooth. Thin, if desired, with a little plant based milk.
Assembly
  1. Brush one side of each pancake with cinnamon sugar mixture. Cut each pancake in half.
  2. Use 4 pancake halves for each 'cinnamon roll'. Take one pancake half and roll tightly with cut side up. roll the second half around the roll, cut side up. Roll the next 2 halves around, cut sides down. Secure bottom with toothpick.
  3. Arrange on plate and drizzle with maple glaze.
*Use 1 lightly beaten egg instead of flax meal and water.
