Preheat oven to 425 degrees F. Line two baking sheets with parchment paper.
Place sweet potatoes on one baking sheet. Spray potatoes liberally with I Can’t Believe It’s Not Butter!® Original Spray. Sprinkle garlic powder, paprika, and salt and black pepper on top and gently toss everything together, making sure the potatoes are coated with I Can’t Believe It’s Not Butter!®. Roast for 30-40 minutes or until fork tender.
Meanwhile, on the other baking sheet, arrange zucchini slices in a single layer. Spray with I Can’t Believe It’s Not Butter!® Original Spray and sprinkle salt and pepper on top. Roast for 10-12 minutes, or until tender.
Now, create the jack-o-lantern with the vegetables. On a serving platter, arrange the sweet potatoes in a circle. Create two holes for the jack-o-lantern eyes and an open space for the mouth. Add black olives as the eyes and shingle zucchini slices to create the smile. Add a couple of broccoli florets at the top of the circle; this is the stem.
Just before serving, spray with more I Can’t Believe It’s Not Butter!® Spray.
