Nutritional guidelines (per serving)

Nutrition information is calculated using an ingredient database and should be considered an estimate

  1. Preheat oven to 425 degrees F. Line two baking sheets with parchment paper.
  2. Place sweet potatoes on one baking sheet. Spray potatoes liberally with I Can’t Believe It’s Not Butter!® Original Spray. Sprinkle garlic powder, paprika, and salt and black pepper on top and gently toss everything together, making sure the potatoes are coated with I Can’t Believe It’s Not Butter!®. Roast for 30-40 minutes or until fork tender.
  3. Meanwhile, on the other baking sheet, arrange zucchini slices in a single layer. Spray with I Can’t Believe It’s Not Butter!® Original Spray and sprinkle salt and pepper on top. Roast for 10-12 minutes, or until tender.
  4. Now, create the jack-o-lantern with the vegetables. On a serving platter, arrange the sweet potatoes in a circle. Create two holes for the jack-o-lantern eyes and an open space for the mouth. Add black olives as the eyes and shingle zucchini slices to create the smile. Add a couple of broccoli florets at the top of the circle; this is the stem.
  5. Just before serving, spray with more I Can’t Believe It’s Not Butter!® Spray.
