Ingredients

  • 2 tbsp I Can’t Believe It’s Not Butter!® Original Spread
  • 1 lb ground chicken
  • 1/2 onion, diced
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 1 lemongrass stalk, minced (light green and white portion only)
  • 1/4 cup soy sauce
  • 1/4 cup sweet chili sauce
  • 1/4 cup water
  • 1 tbsp cornstarch
  • 1 lime, juiced plus more for garnish
  • 1 head bibb lettuce
  • 1/2 cup shredded carrots
  • 1/4 cup peanuts, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup scallions, chopped
Optional Sauce
  • 1/4 cup mayonnaise
  • 3 tbsp Sriracha
  • 2 tbsp rice vinegar

Instructions

  1. In a wok over medium heat, melt Original Spread. Add onion, garlic, ginger and lemongrass and stir until fragrant.
  2. Add the chicken and break up until cooked through.
  3. In a small bowl, mix together water, cornstarch, soy sauce, sweet chili sauce and lime juice.
  4. Add the sauce to the chicken and cook until thickened.
  5. Remove wok from the heat and stir in cilantro and scallions.
  6. Serve on bibb lettuce and top with herbs, shredded carrot, chopped peanuts and lime.
  7. To serve with optional sauce, mix everything together in a bowl until combined. Season with salt and pepper to taste.
