Instructions

  1. Bring lightly salted water to a boil in large nonstick skillet. Add green beans and cook, covered, until crisp-tender, about 7 minutes. Drain and rinse with cold running water. Set aside.
  2. Melt 2 tablespoons I Can't Believe It's Not Butter! Vegan in same skillet over medium-high heat and cook shallot, stirring occasionally, until light golden and tender, about 6 minutes. Stir in garlic and cook 30 seconds. Stir in green beans, remaining 1 tablespoon Spread and salt and cook, tossing, until hot.
  3. Spoon into serving dish and sprinkle with lemon zest.
