Delicious Lemon Pound Cake

  • Preheat oven to 350°. Spray 9-inch loaf pan with no-stick cooking spray; set aside.

  • Combine flour, baking powder and salt in medium bowl; set aside.

  • Beat sugar and I Can’t Believe It’s Not Butter!® with electric mixer on medium-high speed until light and fluffy, about 2 minutes. Add eggs, one at a time, beating well after each addition. Alternately beat in flour mixture, yogurt and vanilla on low speed, until just blended. Stir in lemon peel. Spoon batter into prepared pan.

  • Bake 1 hour or until lightly browned and toothpick inserted in center comes out clean. Cool on wire rack 20 minutes. Remove from pan and cool completely.
