  • 2 Tbsp. I Can’t Believe It’s Not Butter!® Light Spread

  • 1 small orange and/or red bell pepper, diced (about 1 cup)

  • 1 small zucchini, diced

  • 4 large cremini mushrooms or white mushrooms, thinly sliced (about 1 cup)

  • 1/2 cup chopped onion

  • 1 clove garlic, finely chopped

  • 1/3 cup uncooked farro, cooked according to package directions (about 1 cup cooked)

  • 2 Tbsp. grated Parmigiano-Reggiano cheese

  • 2 Tbsp. thinly sliced fresh basil leaves (optional)


  • Melt I Can’t Believe It’s Not Butter!® Light Spread in large nonstick skillet over medium-high heat and cook orange pepper, zucchini, mushrooms and onion, stirring occasionally, 5 minutes or until vegetables are tender.

  • Stir in garlic and cook 30 seconds.

  • Stir in farro and cook, stirring frequently, 1 minute or until heated through.

  • Sprinkle with cheese and basil and season, if desired, with ground black pepper.
