- 2 Tbsp. I Can’t Believe It’s Not Butter!® Original Spread
- 1 cup chopped onion
- 1 can (15 oz.) pumpkin
- 1 quart fat free reduced sodium chicken broth
Melt I Can’t Believe It’s Not Butter!® Spread in large saucepot over medium heat and cook onion, stirring occasionally, 4 minutes or until tender. Add pumpkin and cook, stirring frequently, 4 minutes or until pumpkin darkens. Stir in broth and seasoned salt. Bring to a boil over high heat. Reduce heat to medium and cook, stirring occasionally, 10 minutes.
Garnish, if desired, with sour cream to make a ”Jack O’Lantern” face on the soup.
