Ingredients
- 3 Tbsp. I Can’t Believe It’s Not Butter!® Original Spread
- 1/4 cup onion
- 1 Tbsp. drained, finely chopped sun-dried tomatoes packed in oil
- 1 tsp. chopped fresh thyme
- 1/4 tsp. salt
- Pinch ground white pepper
- 2 cans (14.5 oz. ea.) whole new potatoes, drained and thinly sliced
Directions
Melt I Can’t Believe It’s Not Butter!® Spread in 12-inch nonstick skillet over medium-high heat and cook onion, stirring occasionally, 2 minutes or until onion is tender.
Stir in sun-dried tomatoes, thyme, salt and pepper. Add potatoes, tossing to coat. Cook over medium heat, stirring occasionally, 25 minutes or until potatoes are golden brown. (Potatoes will begin to stick and break apart.)
