Ingredients
- 1 large lime
- 1 small mango, peeled and chopped, 1 cup
- 1/2 small jicama or Gala apple, peeled and chopped, about 2 cups
- 1 green onion, sliced, 1/4 cup
- 2 Tbsp. chopped fresh cilantro
- 8 ounces cod fillet, cut into 1-inch chunks
- 1/2 tsp. chili powder
- 1/4 tsp. ground cumin
- 1/4 tsp. salt
- 2 Tbsp. I Can’t Believe It’s Not Butter!® Original Spread
- 4 corn tortillas, warmed
- 2 cups shredded lettuce
Directions
Zest and juice lime to yield 2 Tablespoons lime juice and 1 Tablespoon lime zest. Toss mango, jicama, scallion, cilantro, lime juice and lime zest in medium bowl; set aside.
Season cod with chili powder, cumin and salt. Melt I Can’t Believe It’s Not Butter!® Original Spread in large non-stick skillet over medium-high heat and cook cod, stirring occasionally, 4 minutes or until cod flakes with a fork.
Spoon lettuce and some of the jicama mango salsa into tortillas. Top with cod. Sprinkle with additional cilantro. leaves, if desired. Serve with remaining jicama-mango salsa.
