Sweet Potato Pie

Ingredients

  • 2 cups mashed cooked sweet potatoes or canned sweet potatoes or yams (about 1-1/2 lbs.)

  • 2 eggs

  • 3/4 cup firmly packed brown sugar

  • 3/4 cup milk

  • 1/4 cup I Can’t Believe It’s Not Butter!® Original Spread

  • 1 Tbsp. all-purpose flour

  • 2 tsp. vanilla extract

  • 2 tsp. ground cinnamon

  • 1/4 tsp. salt

  • 1/4 tsp. ground nutmeg

  • 9-inch unbaked pie shell

Directions

  • Preheat oven to 425°.


  • Combine all ingredients except pie shell in large bowl with wire whisk. Pour into pie shell.


  • Bake 15 minutes. Reduce heat to 375° and continue baking 45 minutes or until knife inserted 1-inch from edge comes out clean. Cool completely on wire rack. Garnish, if desired, with whipped cream.
